In the description of the Roman fish sauce, Venator mentioned fish
entrails as the soure of the heavily salted fish sauce. Entrails are
normally discarded, unless a god use can be found for them, and
logically this was a good use.

Since the SE Asians have always depended in a great part on the sea for
their sustenance, I can certainly understand why they would wish to
flavor foods like rice and greens with a fish sauce which was also
spicy. A diet primarily of grains, is a monotonous one unless some form
of condiment is used.

We don't get involved in using fish entrails today because of the
messiness and smell accompanying the preparation, but a fish sauce, that
is highly spiced is also used in the Caribbean and does a lot for
grains, and garbanzo beans, etc. that do not have much flavor in and of
themselves.

This is not an official list of Nova Roma, though the Sodalis is.
This is our "clubhouse," so to speak. The list is moderated, by me as
Dominus. My rules are simple: keep it courteous, fairly on topic (chatty is
fine,) both Cives and Peregrines are welcome as members of the Sodalis, but
it will be a members only forum. I'll moderate at the least, every Thursday,
so the posts may come slow at first.

Also, I would urge one and all to patronize the official Nova Roma Food
list. Subscribe to the Eagle, buy stamps, t-shirts, decals, etceteras!

The Mead Manual will see the light of day soon. My editor has been ill and
has rightly seen to their health first.
