He was born nearly a half century ago in Nova Brittania ({{Mar 12}} {{1957}}), in the western part of Regio Massachusetts, and spent the first half of that period living there. He did moderately well in his primary and secondary schools.  He fared, fairly, in college (eventually attaining an Associate's degree in Business Studies).&lt;br /&gt;
&lt;br /&gt;
He is a noted poet within the Religio Septentrionalis (the native beliefs of the Germanic - Nordic Tribal Peoples, to which he reawakened on {{Jul 8}} {{1989}}) and amongst his Roman friends.  He has also gained note for the content and character of his prose essays on many topics.  He enjoys wide-ranging conversation of either entertaining or enlightening nature.&lt;br /&gt;
&lt;br /&gt;
His skills in the kitchen and brew room bring pleasure to family and friends alike.  He is also an armorer, cutler, gun smith, decorative metal smith, tailor, leather crafter and wood wright.  His interests range from the Neolithic to the Nanolithic, as evidenced by the many 1000's of books, booklets, magazines, printouts, records, tapes, CD's and DVD's in his home.&lt;br /&gt;
&lt;br /&gt;
In the broader community, he makes his living mostly in retail sales and a little from his writing and other creative ventures.  He is a US Military Veteran, Freemason, Hunters' &amp;amp; Firearms Safety Instructor, hunter, archer, rifleman, camper, conservationist, bird watcher, woods walker and so forth.&lt;br /&gt;
&lt;br /&gt;
He loves learning (mostly in a nontraditional manner) and sharing what he has learned.  He is addicted to solving crosswords.&lt;br /&gt;
&lt;br /&gt;
He is staff to three cats: Hildiekatt Half-shadow the Harrier, Chesapeake Bandylegs the Hunter and miss Teia Honey. He remembers fondly: Lily, Babycat, Tiger, Tuna Cat, Queen Victoria Grey, Calamity Jane Grey, April Dancer , Cerridwen Blythe and Silver Kestrel the Ransacker.  He is fond of excess when naming his pets.&lt;br /&gt;

His skills in the kitchen and brew room bring pleasure to family and friends alike.  He is also an armorer, cutler, gun smith, decorative metal smith, tailor, leather crafter and wood wright. He is staff to four cats: Silver Kestrel the Ransacker, Hildiekatt Half-shadow the Harrier, Chesapeake Bandylegs the Hunter and miss Teia Honey. The recipe falls into the catagory of tasty &amp;quot;modernisms&amp;quot; as mentioned on the Sodalis front page.  It is one of the specialities of my kitchen.  This is a rolled, stuffed flank steak.  I learned how to make it from my mother, she from hers and so on...&lt;br /&gt;
&lt;br /&gt;
'''Bracciola''' (pronounced in our family as breh' zjole) is one of my favorite things to make and eat.&lt;br /&gt;
&lt;br /&gt;
I've included a variation for the vegetarians in the audience.&lt;br /&gt;
&lt;br /&gt;
The stuffing ingredients can be varied as the list of foods which compliment the flavor of beef.&lt;br /&gt;
&lt;br /&gt;
Some stuffings I have used: Italian sausage (hot and sweet) with mushrooms - Mozzarella cheese and mushroom - Popcorn shrimp and smoked ham - Mixed Italian cheeses and hardboiled egg - Mixed Italian cheeses, egg and pepperoni - Celery, carrots, mushroom and onion&lt;br /&gt;
&lt;br /&gt;
The variety of tastes in the Bracciola can be as simple or complex as the cook likes.&lt;br /&gt;
&lt;br /&gt;
In this article I shall describe a Bracciola filled with mushrooms, cheeses, onion and peppers.&lt;br /&gt;
&lt;br /&gt;
==Instructions==&lt;br /&gt;
&lt;br /&gt;
#Take a large flank steak (as close to 2# as possible) and butterfly it (cut it through the thickness, across the grain so it lays flat like the leaves of a book).&lt;br /&gt;
#Pound the steak with a coarse meat mallet to help tenderize and stretch it out.&lt;br /&gt;
#Season the meat on both sides with a light sprinkling of salt, ground pepper (black, white, cayenne and sweet paprika), oregano, sweet basil and powdered, dried onion &amp;amp; garlic.&lt;br /&gt;
#Roll up the meat in plastic wrap and let it &amp;quot;marinate&amp;quot; in the refridgerator while the stuffing is prepared.&lt;br /&gt;
#Mix together: 1 c chopped white mushrooms (flavored with 2 T of rehydrated, chopped Porcinis), 3/4 c shredded, low moisture Mozzarella, 1/4 c each, freshly grated Asiago, Romano and Parmesan, 1 ea sm yellow and red onion - diced, 1/2 ea green, yellow and red Bell peppers - diced.  Don't worry if this seems too much, the excess is spread over the outside of the Bracciola when it is placed in the baking dish.&lt;br /&gt;
#Lay out the meat, place 2/3 of the stuffing alongside the center line of the steak.  Fold this side of the meat over and roll the rest of the steak around this pocket.  Tuck the ends in and secure the roll with cotton butcher's cord.&lt;br /&gt;
#Preheat the oven to 350F.&lt;br /&gt;
#In a hot pan, pour in just enough olive oil to cover the bottom.  Sear the meat all around.&lt;br /&gt;
#Place the browned meat roll into a lightly oiled baking pan.  Spread the rest of the stuffing over it.  Drizzle on a little olive oil and red wine. Bake covered for 30 to 40 minutes, or until done to taste  (I like mine medium rare).&lt;br /&gt;
#Slice into 1&amp;quot; (approx.) portions.&lt;br /&gt;
&lt;br /&gt;
Serve over fresh-baked flat bread with steamed spinach and black olives (dressed with olive oil, lemon juice and crushed garlic).&lt;br /&gt;
&lt;br /&gt;

A further variation is to use the stuffing mix (seasoned with the spices normally used on the meat) as the filling in a pair of pies and use a little extra grated cheese as a topper.  Bake at 325F for 45 to 50 minutes, until golden brown.  (Wrap the crust rim in aluminum foil to prevent overcooking.)  The finished pie is wonderfully complimented by spinach and olives (as above), almonds and figs.&lt;br /&gt;

He is a noted poet within the Religio Septentrionalis (the native beliefs of the Germanic - Nordic Tribal Peoples, to which he reawakened on {{Jul 8}} {{1989}}) and amongst his Roman friends.  He has also gained note for the content and character of his prose essays on many topics.  He enjoys wide-ranging conversation of either entertaining or enlightening nature.&lt;br /&gt;

His skills in the kitchen and brewroom bring pleasure to family and friends alike.  He is also an armorer, cutler, gun smith, decorative metalsmith, tailor, leather crafter and wood wright.  His interests range fom the Neolithic to the Nanolithic, as evidenced by the many 1000's of books, booklets, magazines, printouts, records, tapes, CDs and DVDs in his home.&lt;br /&gt;

In the broader community, he makes his living mostly in retail sales and a little from his writing and other creative ventures.  He is a US Military Veteran, Freemason, Hunters' &amp;amp; Firearms Safety Instructor, hunter, archer, rifleman, camper, conservationist, bird watcher, woods walker and so forth.&lt;br /&gt;

He loves learning (mostly in a nontraditional manner) and sharing what he has learned.  He is addicted to solving crosswords.&lt;br /&gt;

One-Gallon Winemaker&lt;br /&gt;

This is a very basic set of instructions for the beginning home winemaker, using 11.5 oz cans of liquid or frozen juice concentrates.&lt;br /&gt;
&lt;br /&gt;
Make sure that the juice you wish to use does not contain any preservatives, such as sorbates or benzoates; the yeast won't be able to reproduce and then do its work.  Nutritive additives, such as ascorbic or citric acid; will help the fermentation and the flavor.&lt;br /&gt;
&lt;br /&gt;
Anything that contains sugars can be fermented into an alcoholic beverage.  Some raw materials work better than others for making a nicely flavored drink:  grapes, apples, honey, malted barley, and the like.  (The winemaker’s motto:  If it has sugar, it ferments!)  We'll concentrate on grapes and other fruits herein.&lt;br /&gt;
&lt;br /&gt;
We’re not looking at fine vintage wines as an end result.  But, these juices will make nice, drinkable table wines.&lt;br /&gt;
&lt;br /&gt;
You have the necessary gear if you’ve been making mead or beer.  If not, very little equipment is actually needed.&lt;br /&gt;
&lt;br /&gt;

* a 6-quart stainless or enameled pot,&lt;br /&gt;
* a plastic stirring spoon,&lt;br /&gt;
* 1 qt capacity measuring cup,&lt;br /&gt;
* set of kitchen measuring spoons,&lt;br /&gt;
* a 2 gal food grade plastic tub with snap lid drilled for a rubber stopper/airlock (primary fermenter),&lt;br /&gt;
* clear plastic sheet large enough to cover the tub,&lt;br /&gt;
* 2-1 gallon glass jugs (secondary fermenter) with 1 drilled rubber stopper to fit,&lt;br /&gt;
* airlock,&lt;br /&gt;
* 3” x 3/8” inside diameter clear aquarium water line,&lt;br /&gt;
* 2 cleaned/sanitized screw top plastic soda bottles with caps (2 L size work well).&lt;br /&gt;
&lt;br /&gt;
We will be using dried all-purpose wine yeast for all of the following.&lt;br /&gt;
&lt;br /&gt;
Unscented household bleach can be used as a sanitizer; be sure and rinse thoroughly.&lt;br /&gt;
&lt;br /&gt;
===Basic Process===&lt;br /&gt;
&lt;br /&gt;
Gather all equipment and ingredients per recipe.  Sanitize the equipment and working area.  Bring 1 qt of water to a boil, and then turn off the heat.  Dissolve in the concentrate and any extra sugar.  Dissolve in any additives, including 1 crushed Campden tablet.  Pour into the primary fermenter with 1 qt very cold water.  Top off to 1 gallon, cover with the plastic sheet and let rest at least 24 hours.  (DON'T ADD THE YEAST UNTIL THE REST PERIOD IS OVER!)  Rehydrate the yeast in 1 cup of warm water for 15 minutes and stir it into the must (readied wine base).  Cover with the plastic sheet; stir the yeasty foam cap down twice a day for three days.  On day 4 snap on the cover and insert the water-filled airlock.  Siphon off the debris after 1 week to the glass secondary.  Top off to 1-gallon with boiled tap water.  Let the wine ferment until all activity ceases.  Siphon to the second glass jug and then top off with sufficient boiled water in which 1/2 Campden tablet has been dissolved. Airlock and let rest 3 weeks to clear.  Siphon into the two soda bottles and cap.  Let age 2 to 3 months.&lt;br /&gt;
&lt;br /&gt;
Basic Red or White Grape:  3 cans concentrate, 1 c table sugar, 1 t acid blend, 1/2 t pectic enzyme, 1 t nutrient, 1 pkg wine yeast&lt;br /&gt;

Basic Apple:  2 cans concentrate, 2 c sugar, 1 1/2 t acid blend, 1/2 t pectic, 1/4 t tannin, 1 t nutrient, 1 pkg wine yeast&lt;br /&gt;

Basic Cherry:  4 cans concentrate, 1 t acid, 1/2 t pectic, 1 t nutrient, 1 pkg wine yeast&lt;br /&gt;

Honey can be substituted at a rate of 1 1/4 c per 1 c sugar.&lt;br /&gt;

Any good beverage does take some bit of work and time; this is nothing different.  While one can brew good ale in as little as 3 - 4 weeks, wines and meads do take much longer.&lt;br /&gt;
&lt;br /&gt;
I use red Zinfandel juice as recent information indicates strongly that this is a modern version of the Roman grape known as &amp;quot;Primitivo,&amp;quot; which is still grown in Italy.&lt;br /&gt;
&lt;br /&gt;
The word &amp;quot;Must&amp;quot; herein refers to the mixture of juice and other sugars, before the yeast is added.  The word &amp;quot;lees&amp;quot; is the layer of sediment, which collects at the bottom of the fermenting vessel.  When using an airlock, check it every 2 - 3 days to make sure it hasn't dried out.  I use cheap vodka to fill the airlock.  It is sterile and will not harm the Pyment if negative pressure forces some from the airlock into the fermenting vessel.&lt;br /&gt;
&lt;br /&gt;
It does look like a lot of carboys are used for one batch.  But, 1 primary fermenting vessel (7 gallon, polythene vat) and 2 glass carboys (6 gallon) will suffice.&lt;br /&gt;
&lt;br /&gt;
I will write another article detailing winemaking-brewing equipment, methodology and terminology.&lt;br /&gt;

Yeast starter: 1 pckt dried red wine yeast, 2 c warm water, 1 c fresh apple juice, 1/4 c honey, 1 B-1 tab - crushed&lt;br /&gt;

Do this the day before you are going to make the Pyment Must: In a 1 qt bottle use the warm water to dissolve the honey and B-1, add-in the apple juice and shake vigorously for several minutes to aerate the liquid.  Sprinkle in the dried yeast, cap the bottle with an airlock and let this work away, building a nice colony of yeast cells.&lt;br /&gt;
&lt;br /&gt;
Ingredients for the Must: 4 1/2 qt Red Zinfandel grape juice concentrate, 1# pitted, dried dates - chopped, 6 qt Hot water, 3 1/2# wildflower honey, 6 vitamin B-1 tablets - crushed, juice of 1 med lemon, 1 Tbsp strong tea, Cold water sufficient to top off the primary fermenter to 6 gallons, plus 1 pt extra grape juice, water as needed, 2 pckt unflavored gelatin&lt;br /&gt;
&lt;br /&gt;
Place the grape juice and dates in the fermenting vessel, pour half of the hot water over this, stir until the juice is blended into the water. Add in the honey, B-1 and the balance of the hot water.  Stir well until the honey is dissolved. Stir in the lemon and tea.  Top off the primary to 6 gallons.  Check the temperature; once the must is between 70F - 75F, stir it well to aerate the liquid, and then pour in the yeast culture.&lt;br /&gt;
&lt;br /&gt;
Cover the vessel with a loose plastic sheet, tie it around the base.  After 24 hours check to make sure that fermentation has started.  Stir down the foam cap and floating fruit twice a day for 2 weeks.&lt;br /&gt;
&lt;br /&gt;
Scoop out the dates into a fine mesh nylon bag, squeeze them as dry as possible into the fermenter.  Siphon the working Pyment into a 6 gallon glass carboy, leaving as much of the lees behind as possible.  Topoff with room temp, 1/4 strength Zin juice (and water, if needed) to the 6 gallon mark.  Cap the carboy with an airlock and let this work away for 4 weeks.&lt;br /&gt;
&lt;br /&gt;
Siphon the Pyment off the lees to another carboy.  Topoff as above, using plain water if all the 1/4 juice is gone.  Replace the airlock and let the Pyment work until all activity ceases (4 - 8 weeks).&lt;br /&gt;
&lt;br /&gt;
Siphon the Pyment off the lees to another carboy.  Boil 2 cups of water and dissolve in the gelatin.  Add this to the Pyment, top off with cool water to 6 gallons and airlock the carboy.  The gelatin will help the pyment clear.  Let rest for 4 weeks.&lt;br /&gt;
&lt;br /&gt;
Siphon the Pyment off the lees to another carboy.  Top off with cool water to 6 gallons and replace the airlock.  This is the bulk aging step in the life of the Pyment. &lt;br /&gt;
I present here a recipe for one of the specialities of the&lt;br /&gt;
house.  This is a rolled, stuffed flank steak.  I learned how&lt;br /&gt;
to make it from my mother.&lt;br /&gt;
&lt;br /&gt;
Bracciola (pronounced in our family as breh' zjole) is one of&lt;br /&gt;
my favorite things to make and eat.&lt;br /&gt;
&lt;br /&gt;
I've included a variation for the vegetarians in the audience.&lt;br /&gt;
&lt;br /&gt;
The stuffing ingredients can be varied as the list of foods&lt;br /&gt;
which compliment the flavor of beef.&lt;br /&gt;
&lt;br /&gt;
Some stuffings I have used:&lt;br /&gt;
Italian sausage (hot and sweet) with mushrooms&lt;br /&gt;
Mozzarella cheese and mushroom&lt;br /&gt;
Popcorn shrimp and smoked ham&lt;br /&gt;
Mixed Italian cheeses and hardboiled egg&lt;br /&gt;
Mixed Italian cheeses, egg and pepperoni&lt;br /&gt;
Celery, carrots, mushroom and onion&lt;br /&gt;
&lt;br /&gt;
The variety of tastes in the Bracciola can be as simple&lt;br /&gt;
or complex as the cook likes.&lt;br /&gt;
&lt;br /&gt;
In this article I shall describe a Bracciola filled with&lt;br /&gt;
mushrooms, cheeses, onion and peppers.&lt;br /&gt;
&lt;br /&gt;
01.    Take a large flank steak (as close to 2# as possible)&lt;br /&gt;
and butterfly it (cut it through the thickness, across the&lt;br /&gt;
grain so it lays flat like the leaves of a book).&lt;br /&gt;
02.    Pound the steak with a coarse meat mallet to help&lt;br /&gt;
tenderize and stretch it out.&lt;br /&gt;
03.    Season the meat on both sides with a light sprinkling&lt;br /&gt;
of salt, ground pepper (black, white, cayenne and sweet paprika),&lt;br /&gt;
oregano, sweet basil and onion &amp;amp; garlic powders.&lt;br /&gt;
04.    Roll up the meat in plastic wrap and let it &amp;quot;marinate&amp;quot;&lt;br /&gt;
in the refridgerator while the stuffing is prepared.&lt;br /&gt;
05.    Mix together: 1 c chopped white mushrooms (flavored with&lt;br /&gt;
2 T of rehydrated, chopped Porcinis), 3/4 c shredded, low moisture&lt;br /&gt;
Mozzarella, 1/4 c each, freshly grated Asiago, Romano and Parmesan,&lt;br /&gt;
1 ea sm yellow and red onion - diced, 1/2 ea green, yellow and red&lt;br /&gt;
Bell peppers - diced.  Don't worry if this seems too much, the&lt;br /&gt;
excess is spread over the outside of the Bracciola when it is&lt;br /&gt;
placed in the baking dish.&lt;br /&gt;
06.    Lay out the meat, place 2/3 of the stuffing alongside the&lt;br /&gt;
center line of the steak.  Fold this side of the meat over and roll&lt;br /&gt;
the rest of the steak around this pocket.  Tuck the ends in and&lt;br /&gt;
secure the roll with cotton butcher's cord.&lt;br /&gt;
07.    Preheat the oven to 350F.&lt;br /&gt;
08.    In a hot pan, pour in just enough olive oil to cover the&lt;br /&gt;
bottom.  Sear the meat all around.&lt;br /&gt;
09.    Place the browned meat roll into a lightly oiled baking pan.&lt;br /&gt;
Spread the rest of the stuffing over it.  Drizzle on a little olive&lt;br /&gt;
oil and red wine. Bake covered for 30 to 40 minutes, or until done&lt;br /&gt;

Food is the natural compliment to beverages.&lt;br /&gt;
&lt;br /&gt;
I present here a recipe for one of the specialities of the&lt;br /&gt;
house.  This is a rolled, stuffed flank steak.  I learned how&lt;br /&gt;
to make it from my mother.&lt;br /&gt;
&lt;br /&gt;
Bracciola (pronounced in our family as breh' zjole) is one of&lt;br /&gt;
my favorite things to make and eat.&lt;br /&gt;
&lt;br /&gt;
I've included a variation for the vegetarians in the audience.&lt;br /&gt;
&lt;br /&gt;
The stuffing ingredients can be varied as the list of foods&lt;br /&gt;
which compliment the flavor of beef.&lt;br /&gt;
&lt;br /&gt;
Some stuffings I have used:&lt;br /&gt;
Italian sausage (hot and sweet) with mushrooms&lt;br /&gt;
Mozzarella cheese and mushroom&lt;br /&gt;
Popcorn shrimp and smoked ham&lt;br /&gt;
Mixed Italian cheeses and hardboiled egg&lt;br /&gt;
Mixed Italian cheeses, egg and pepperoni&lt;br /&gt;
Celery, carrots, mushroom and onion&lt;br /&gt;
&lt;br /&gt;
The compement of tastes in the Bracciola can be as simple&lt;br /&gt;
or complex as the cook likes.&lt;br /&gt;
&lt;br /&gt;
In this article I shall describe a Bracciola filled with&lt;br /&gt;
mushrooms, cheeses, onion and peppers.&lt;br /&gt;
&lt;br /&gt;
01.    Take a large flank steak (as close to 2# as possible)&lt;br /&gt;
and butterfly it (cut it through the thickness, across the&lt;br /&gt;
grain so it lays flat like the leaves of a book).&lt;br /&gt;
02.    Pound the steak with a coarse meat mallet to help&lt;br /&gt;
tenderize and stretch it out.&lt;br /&gt;
03.    Season the meat on both sides with a light sprinkling&lt;br /&gt;
of salt, ground pepper (black, white, cayenne and sweet paprika),&lt;br /&gt;
oregano, sweet basil and onion &amp;amp; garlic powders.&lt;br /&gt;
04.    Roll up the meat in plastic wrap and let it &amp;quot;marinate&amp;quot;&lt;br /&gt;
in the refridgerator while the stuffing is prepared.&lt;br /&gt;
05.    Mix together: 1 c chopped white mushrooms (flavored with&lt;br /&gt;
2 T of rehydrated, chopped Porcinis), 3/4 c shredded, low moisture&lt;br /&gt;
Mozzarella, 1/4 c each, freshly grated Asiago, Romano and Parmesan,&lt;br /&gt;
1 ea sm yellow and red onion - diced, 1/2 ea green, yellow and red&lt;br /&gt;
Bell peppers - diced.  Don't worry if this seems too much, the&lt;br /&gt;
excess is spread over the outside of the Bracciola when it is&lt;br /&gt;
placed in the baking dish.&lt;br /&gt;
06.    Lay out the meat, place 2/3 of the stuffing alongside the&lt;br /&gt;
center line of the steak.  Fold this side of the meat over and roll&lt;br /&gt;
the rest of the steak around this pocket.  Tuck the ends in and&lt;br /&gt;
secure the roll with cotton butcher's cord.&lt;br /&gt;
07.    Preheat the oven to 350F.&lt;br /&gt;
08.    In a hot pan, pour in just enough olive oil to cover the&lt;br /&gt;
bottom.  Sear the meat all around.&lt;br /&gt;
09.    Place the browned meat roll into a lightly oiled baking pan.&lt;br /&gt;
Spread the rest of the stuffing over it.  Drizzle on a little olive&lt;br /&gt;
oil and red wine. Bake covered for 30 to 40 minutes, or until done&lt;br /&gt;
to taste  (I like mine medium rare).&lt;br /&gt;
10.    Slice into 1&amp;quot; (approx.) portions.&lt;br /&gt;
&lt;br /&gt;
Serve with buttered egg noodles and steamed spinach (dressed with&lt;br /&gt;
olive oil, lemon juice and crushed garlic).&lt;br /&gt;
&lt;br /&gt;
(((Another method, if one likes sauce, is to cover the whole with&lt;br /&gt;
1# each of diced and crushed tomatos (Roma or Plum).  Then&lt;br /&gt;
substitute macaroni or spaghetti for the egg noodles.)))&lt;br /&gt;
&lt;br /&gt;
A variation is to use the stuffing mix (seasoned with the spices&lt;br /&gt;
normally used on the meat) as the filling in a pair of pies and&lt;br /&gt;
use a little extra grated cheese as a topper.  Bake at 325F for&lt;br /&gt;
45 to 50 minutes, until golden brown.  (Wrap the crust rim in&lt;br /&gt;
aluminum foil to prevent overcooking.)  The finished pie is&lt;br /&gt;
wonderfully complimented by spinach (as above), black olives&lt;br /&gt;
almonds and figs.&lt;br /&gt;
